Copy Cat Quick Cooker Olive Garden Zuppa Toscana
I love this recipe. I created it and made it my own from researching several other Copycat recipes online.

1-2 Tbsp. Olive oil ·
1 large onion,
diced (or 2 small) ·
2-3 cloves garlic, pressed with the Pampered Chef Garlic Press ·
Mixture of seasonings to taste, including: Ø
Salt (about 1 Tbsp.) Ø
Pepper (about 2 tsp.) Ø
Smoked paprika (about 1.5-2 tsp.) Ø
Herbs de Provance (1-2 tsp.) Ø
Rubbed Sage (about ½ tsp.) Ø
Thyme (about ½ tsp.) Ø
Rosemary (about ½ tsp.) ·
1 bay leaf ·
Pinch red pepper flakes (if desired) ·
1lb Italian Sausage (I use mild, feel free to use sweet or hot) browned in
the Pampered Chef Rock Crock and stirred/chopped using the Pampered Chef Mix
and Chop) ·
4 slices bacon, cooked and chopped (or a handful of real
bacon pieces) ·
2 quarts broth (I use Better Than Bouillon
Chicken, Roasted Garlic and Sautéed
Onion to make my broth) ·
4 medium potatoes, sliced (or an equal amount of petite
potatoes, quarters) ·
1-2 bunches kale or 1-2 bags Kale type salad
mixes (look for mixed that are made with primarily Kale, spinach or similar types of veggies). ·
¼ cup heavy whipping cream |

In the Instant Pot Sauté onions in olive oil
until translucent, add garlic and continue to cook. ·
Add seasonings and stir to combine. ·
Add cooked sausage and bacon and cook for 1-2
minutes. ·
Pour in broth and stir. ·
Add potatoes ·
Add bay leaf and red pepper flakes (if using). ·
Close
Instant Pot and make sure the vent sealed. ·
Using the Manual or Pressure Cook button, cook for 12 minutes on high pressure. ·
Once cooking time is up, use the quick release within a few minutes, and release the pressure. ·
Make sure potatoes are soft enough to easily
break up, if they are still hard. Use
he sauté setting to continue cooking then until they reach the desired
consistency ·
Set your Instant Pot to Sauté ·
Taste the broth and adjust seasoning as
desired. ·
Add the kale and allow to some for about 10
minutes. · Remove the pot from heat and add whipping cream. (Or adds hadn't cream to individual servings, if desired) |
